What have you got left today: Orange Peel

Got some oranges and not sure what to do with them? Here's how you can use them up, including the peel!

No-Waste Orange Peel Marmalade

INGREDIENTS

1kg oranges

1kg granulated sugar

1.5 L water

Scrub and clean the oranges before placing them whole in a large saucepan. Cover the oranges with water and bring to a boil. Reduce the heat, simmer and cover for about 45 minutes to 1 hour until the fruit is soft. I recommend doing this the night before and leaving the oranges to sit in the water overnight

The next morning, remove the oranges from the saucepan and cut them in half, scoop and remove the flesh, pith and seeds into a bowl then add them to a muslin or cheesecloth bag, secure with a string and add to the saucepan.

Thinly slice the peels and add to the pan. Set the pan on a low heat and add the sugar. Be sure to stir until the sugar is dissolved. Bring the liquid to a rolling boil for 15 minutes then cook for another 30-45 minutes, occasionally stirring.

Test the marmalade by dropping a little bit of the mixture to a chilled spoon. If the mixture wrinkles, it is ready. Carefully ladle the marmalade into clean jars leaving some space at the top of the jar. Twist and seal and place in the fridge to thicken and cool.

Non-toxic Citrus House Cleaner

METHOD

  1. Put your peel into a large sealable container and cover with white vinegar
  2. Seal the lid and leave to infuse for 2-3 weeks.
  3. After, mix equal parts water with the citrus and vinegar solution and transfer to an old spray bottle
  4. Add a few drops of essential oil if you like.

Remember Vinegar is a great cleaner as it cuts through tough grease, grime and mineral deposits.

But its important to remember when NOT to use it.

• Granite • Marble • Soapstone • Kitchen knifes • Solid wood.
